    How would you score it?

Batter hits a high fly ball to the right field corner. Right fielder runs over to catch the ball, but loses it in the sun. The ball hits ground 5ft away from the right fielder and the batter ends up at second.

    I score it a double.

if you blame the sun for what otherwise would have been a catch you have to do the same when its wet (cant grip the ball/bad throw), when the wind is blowing (misjudge) etc. Are some plays impossible, yes under all those circumstances but... JMO.

A base hit is credited to a batter when she advances to a base
    safely:

14.3.7 On a fair ball that might have touched a fielder but
    was
blown by the wind, lost in the sun or lights, or that falls to
the ground because the fielder slips on the field or an object on
the field (e.g., catcher’s mask, base, home plate, sprinkler).
